Happy February!
And, I’m sorry.
I did not take a photo of my dinner tonight. But, I have a good excuse.
We had dinner at Grammy and Pop-Pop’s tonight (aka my husband’s parents)
and we devoured Grammy’s lasagna before I could come to my senses and snap a photo.
Grammy’s lasagna is the bomb.
But, I will make it up to you.
Grammy gave me the recipe.
(!!!!!!)
I could not, however, leave you without any ability to stalk my kitchen tonight, so here goes.
Wednesday night’s not-dinner:
Since I could not post my dinner, I will give you a peak at my dessert.
You see, I have a thing for smoothies. A serious thing.
Especially when they’re served in my favorite mug, hand-painted by my guy.
Smoothie: Mango/Banana/Coconut/Almond Milk/Coconut Milk
…and a little spinach, so I can keep beating the boys at arm wrestling.
And if my smoothie didn’t do it for you, here is what I just packed my husband for his lunch tomorrow.
Southwest-ish Salad: Baby Romaine/Chicken Breast/Carrots/Grape Tomatoes/Black Beans/Sweet Corn

Thank you!! I seriously love my smoothies. And you’re asking a very timely question. I currently use a standard Kitchen Aid blender, and while it’s decent, it doesn’t get things really smooth (and ice crushing is a mess). K and I are lusting over the Vitamix, but…you know…it’s a Vitamix, with a huge price tag. I just want to make 30 second avocado ice cream!!
